课程介绍

营养与食品卫生学分为理论教学课程与实验教学课程二部分,实验教学课程主要为配合理论教学课程而设置,其目的是为本科学生提供一个实验平台,对理论教学课程中涉及到的各种食物营养素包括蛋白质、脂肪、碳水化合物、维生素、矿物质、纤维素等以及食物中的有毒有害物质包括农药、食品添加剂、微生物等用仪器、化学和生化等方法和手段进行实验性分析和检测。通过这种实验过程,使学生对理论教学课程中所涉及到的相关内容有更进一步的了解和认识,同时也能让学生掌握本学科中仪器分析、化学分析和生化分析的方法和技能。

 
Nutrition and Food Hygiene is combined by two parts of the theoretical course and the experimental course, the experimental course is mainly set up to co-operate the theoretical course, the purpose of this course is to provide the experimental platform for the students. through instrumental, chemical and biochemical methods, the students can measure the various nutrients in the foods such as protein, fat, carbohydrate, vitamins, minerals, celluloses and the toxic and harmful materials in the food including farm chemicals, food additives and microorganisms which are involved in the theoretical course. Through this course, the students can deeply understand the relative contents involved in the theoretical course and learn the methods and skills of instrumental, chemical and biochemical analyses.
